I... don't know anything about trucks or cars except how to maintain them and how to drive them. If I were to look for a truck to pull a trailer (probably a small stock or two horse), what would I need as far as specifications are concerned?
Can an '04 Chevy Suburban pull a two horse or would I need something with more power? It would not be a frequent occurrence. Honestly I'm not sure if it's worth buying a trailer if it's just going to be sitting there...

Suburbans have plenty of power to pull a horse trailer. Besides having enough power, they also have a long enough wheelbase for safety. I think the recommended minimum is 114 inches. When I was a kid, back in the '80's our first horse trailer towing vehicle was a suburban which also towed our camping trailer. Back then, it wasn't uncommon to see people towing with those big V-8 station wagons. You never see that anymore.
You will need to make sure the Suburban (or truck) has a frame mounted hitch (not just a towing ball mounted in the bumper). You'll also need trailer wiring and a plug. It might have come new with the hitch and wiring, a lot do these days. You'll need an electric brake controller, which mounts where you can reach it while driving. The brand new Chevy's come with integrated brake controllers, but I doubt they did that in '04 (I know for sure they didn't in '03).

I'm getting an XL-5 and a VXL. I am great at driving short course trucks, and I'm sorta good with buggies. What XL-5 should I get? What VXL should I get?

XL-5 is an ESC, and VXL is their line of electric vehicles.
Based on the repair parts I used to sell when I worked behind the counter, I'd recommend the Stampede.
